How do I run something playful people come back to?

You have hosted a game night, a walk, a supper. People enjoyed it and said so. It did not happen again, and you are not sure whether the fault was the thing or the way you ran it.

What’s really going on

You want to run something playful that people return to. The first time is easy — novelty carries it. The fourth is the one that matters, and almost nothing survives to the fourth by accident. First, repeat the date, not the idea. First Thursday. Same place. A new invitation each time is a new decision each time, and decisions are what kill these. Second, keep the barrier absurdly low. No skill required, no preparation, latecomers welcome. Every requirement you add removes people, and the ones it removes are the ones who were unsure. Third, make it end at a stated time. Things people can leave cleanly are things people return to; an evening with no edge is one they will start avoiding without knowing why. Fourth, give everyone something small to bring or do. People belong to what they contributed to, not to what they were hosted at. Fifth, run it three times before you judge it. The second is usually the flattest and it is where most hosts stop. That is the one to push through, not the verdict. What is the repeating date?
